Awesome Dessert Pizza



I don't know about you, but I'm a huge fan of pizza. If you think about it, it can actually be kind of healthy-you've got your grains in the crust, your dairy in the cheese, your meat (optional) in your topping and your veggies in the sauce and toppings. At least, this is what I've told myself when I feel guilty about indulging! If you want a sweet treat you can make the (kind of) same excuse about, here's a recipe I found for a 'fruit pizza'. It's really more of a white chocolate sugar cookie, but call it what you want. :)

Fruity 'Pizza'
2 ¾ cups flour (all-purpose)
2 cups sugar
2 cups vanilla baking chips
2 eggs
½ cup butter
½ cup shortening
1 8-oz package cream cheese
¼ cup heavy cream
1 cup pineapple juice
1 pint strawberries, sliced
2 tbsp cornstarch
2 tsp cream of tartar
1 tsp baking soda
1 tsp lemon juice
¼ tsp salt
Any other fruits you like, in any amount you like


Preheat oven to 400 F. Lightly grease a 10”x15” cookie sheet.

Cookie 'crust'-In a large bowl, mix the flour, baking soda, cream of tartar and salt. In a separate bowl, combine 1 ½ cups sugar, butter and shortening, preferably with an electric mixer. Add eggs and combine the two mixtures into a stiff dough. Press dough onto cookie sheet, covering it. Bake for 10 minutes, or until light brown. Set aside to cool.

'Cheese'-Microwave the cream and chips on high for 60-90 seconds, or until melted and smooth. Mix in the cream cheese with an electric mixer and spread onto the 'crust'.

'Toppings'-Combine cornstarch, ½ cup sugar and juices and cook over medium heat until the sugar is dissolved. Place the fruit on top of the 'cheese' and drizzle the sugar mixture over it. Place in the refrigerator and keep cool until served.


Granted, this 'pizza' only features two of the four food groups-fruit and dairy. I suppose you could say it has meat since eggs are future chickens, but I think that's stretching it a bit. :) It doesn't matter, because the sight and smell of this dessert is 'excuse' enough. :) Enjoy, and save me a piece!
