Easy Barbecued Chicken


If you're looking for a great and easy recipe for your next outdoor party, here's a great recipe for barbecued chicken.
Ingredients:
  • Barbecue sauce, any brand*
  • One 3.5-pound chicken
  • 3 tbsp scallions, chopped
  • 1-1/2 tsp lime zest, freshly grated
  • 1-1/2 tbsp lime juice, freshly squeezed
  • Salt and freshly-ground black pepper, to taste

Heat grill to medium-high or, if you prefer, preheat a broiler and line a rimmed baking sheet with tin foil.  Cut the chicken into 8 pieces and season with salt and pepper.

In a bowl, stir together the barbecue sauce, scallions, lime juice and zest. Set aside 1/2 cup sauce for later and brush the rest onto the chicken. Place onto grill or sheet. Cook for 10 minutes each side, roughly 4" from the heat source. Baste with sauce and cook for 5 more minutes. Place on a plate and drizzle the set-aside sauce onto a plate. Serve with whatever side or garnish you like. I personally use grilled pineapple, but I'll take any excuse to grill pineapple! Enjoy!



*You can use a bottled sauce but, if you want to make an extra personal touch, here is a recipe for a nice sauce with a 'kick'.
  • 1/4 cup, 2 tbsp dark brown sugar
  • 3/4 cups ketchup
  • 2 tbsp Dijon mustard, any brand
  • 3 tbsp white wine vinegar
  • 2 tbsp onion, minced
  • 1 tsp hot sauce (I'm a Texas Pete girl), or to taste
  • 1/4 tsp black pepper, freshly ground
Basically, mix, cover and refrigerate. It keeps for about a week but, trust me, it won't last that long!
