Chocolate Peanut Butter Cups


Here's a nice treat you can wrap and give out on Halloween.

Chocolate Peanut Butter Cups
2 lbs confectioner's chocolate*-milk or dark are popular, but white might be interesting.
1 cup creamy peanut butter, unsalted
¾ cup powdered sugar
1/3 cup light brown sugar
4 tbsp butter, unsalted
1 tsp course sea salt

Combine peanut butter, powdered sugar, butter, brown sugar and salt in a mixing bowl. Break or cut the chocolate into chunks and place in a heavy-bottomed saucepan. Using low heat, melt the chocolate until it's smooth. Then, pour it into a heat-resistant** measuring cup.
Now, arrange cupcake wrappers (size is up to you) on a baking sheet. Very carefully, pour or spoon the melted chocolate into each cup, making sure to cover the bottom. Flatten chocolate to about 1/8” and refrigerate for 10 minutes. While the chocolate is cooling, form the peanut butter mixture into discs slightly smaller than the cups and lay on a piece of parchment paper. Take the chocolate and place one disc into each wrapper. Use the rest of the chocolate to spoon over top of the discs and refrigerate for 30 minutes. Take it out, let it stand for about 5 minutes or so, and wrap as you wish.

*You could probably get away with using chocolate chips, but confectioner's chocolate is made for this sort of thing and will probably be easier to work with.
**I suggest using Pyrex or glass because very hot liquids such as this could damage a plastic cup. Just trust me on this one. :)
